and then it's never mentioned again. There are no markers to select on the event page, and I can't recall if I've ever seen a Sink Land event in any adventure. Have I understood this correctly if I take this to mean 1-5 tiles of all landmass adjacent to water sink into the ocean? Basically it's a coastal erosion event?

Yes, it destroys land adjacent to water.
You can see it in the open play game about Atlantis, the one that has 3 episodes. In the last episode, multiple Sink Lands destroy almost all land except a strip of land near the entrances to the map in the corner.
