Has anyone documented what houses need to evolve yet?
First time I have been around for a release and I am not used to not having a ton of information available to use and learn from!

Thanks for the data, homegrown. Last question (well, maybe last question): I seem to recall from the earlier games that if you gave your housing the product but not the service for the higher level, it was distributed but not consumed until the higher level was reached. Same here?

Yes, Nutmegger, I believe that is still the case. Granted, it's not something I've paid particular attention to. The houses "may" eat the better appetizing food before they get the Ceramics for Elegant Dwelling, but the food isn't just used for housing evolution, it adds to city health as well.
You can actually get a look in the demo at ornate apartments in the last Xia (tutorial) mission. If you bring the hero Huang Di to the city and run him around the common housing block, he acts as an acupuncturist and they evolve to ornate apartment from elegant dwelling. If you don't keep him lapping, they will eventually devolve.
