Probably a noobie question: when Rome asks for something I click the stock tickbox in the Commerce interface. So far so good. But when it is a factory produced item - e.g. clothing - the factory won't send the goods to the trade depot; so once the factory is full it stops making the goods - and the only way to complete Rome's request is to make more factories! Any way to make the trade depot store the goods?

The problem is, the factories don't deliver goods. The trade depots and warehouses send out cart-pushers to collect the goods from the factory. The solution is to build a warehouse!
You will need to set the warehouse orders so that the cart-pusher gets the goods from the factory, and doesn't just fill the warehouse with whatever is available.
Food works the same way. Farms don't deliver, cart-pushers from the granaries and markets get the food.

Thanks for your reply Kach. However so far as I can see there is no "get" order as opposed to fill, as in the old games - so I guess you have to have a dedicated - or nearly dedicated warehouse for the item I wish to stock?

Yes, that's right. There is no 'Get' feature because the warehouses (and granaries and markets) 'Get' by default.
If you set the warehouse to hold 32 of whatever you want to stockpile, and zero for all other goods, then the cart-pushers will fetch only that stockpiled good.
I often set warehouses to 16/16 of two different goods, and I usually have multiple warehouses supplying the markets.

Yes it's generally a great practice to have warehouses only accept 2 goods a piece.
sometimes in the event of Exotic goods, you can have them take 3 goods each (or in very low production maps, 3 of common goods).
Just like what was mentioned, there is no 'get' function, just adjust what your warehouses 'accept'

Well here's my problem, when I try to set a warehouse to get a particular item only, it crashes the game. Same thing happens if I try to set a Basic Market to not allow plebs, or a Exotic Market just to see what goods the market is selling.
Any ideas why clicking on a warehouse "orders" or the other issues happens?
