Hi,
When the raiders arrive, do you have to switch the towers on individually or is there a quick button somewhere to turn them all on. I can hear my city burning as I write!

Yes, you have to switch on each tower manually, but here's how I do it:
I build my walls with gatehouses and towers, and let them soak up unemployed plebs by setting the Labor-priority to LOWEST in the advisor-screen. Then, when the raiders come, I run the priority right up to HIGHEST as soon as I get the warning, and then I just sit back and watch as my walls are filled with willing plebs. When the actual attack arrives, I can mothball towers and gatehouses furthest away from the heat of the action, if my labor is strained.
Just remember to set priority back to LOWEST when the attack is over, to get the plebs back to farms and factories.
I always set Prefects and Engineers to HIGHEST, to keep the city safe and sound! The same with Markets, to avoid grumbling due to lack of commodities when I'm fighting for a while.
