I always see screenshots and videos of people running entire industry blocks with a few houses, but I have no idea how that is even possible. When I try and do the same thing most of the buildings are left with 0-1 employees. Is this a difficulty thing, or is it a version thing? (I have the latest patch)

No.

You can have just a few houses providing labor access to a lot of industries, even if most of the people live far away from the industries. However, there must be enough workers in the city to staff the industries. (This isn't how I like to design a city, but is common.)

To expand on Brugle's reply, those houses don't actually supply all the workers. The important factor is what your unemployment numbers are. And priority settings. Those few houses are basically feeder houses, and just provided the people with houses to pass and check to see if there are workers available for their business. (like a priority 1 building would get employees when a priority 9 building wouldn't in a massive work shortage).
